The main difference in making red wine and white wine is that red grapes are fermented on the skins and when making white wine the  grapes are pressed first and only the juice is fermented.

There are many recipes for making concord wine - they are all about fermenting the sugar in the juice into alcohol and sometimes leaving a sweet wine or sometimes a dry wine.  Most people prefer a sweeter concord wine since it has a much higher flavor content.
