Honey, Mint, and Cucumber Salad. This is a salad that would be popular in Biblical times. The honey, mint, and cucumber salad such as this would have been extremely refreshing to a parched desert wanderer.

Prior to cutting the cucumbers, take a salad fork and score the rind, making thick indentations. Slice the cucumber into fairly thick slices (the scoring will give them a variegated, fancy look), and throw them into a large bowl with the mint. Mix together the honey and the kefir, and pour over the cucumber/mint combination. If you are not going to serve the salad right away, refrigerate.
Just prior to serving, squeeze the juice of 2 limes over the salad.
Yield: 8 servings
1/3 cup honey
2 tablespoons brandy
2 tablespoons lemon juice
2 cups sour cream
about 1 pound grapes
Mix honey, brandy, lemon juice with sour cream. Pour over grapes and mix well or put in bowl for a dip.
This can be made in advance and kept chilled until ready to serve. (I have no idea where this recipe originated.)
Arrange all fruit on platter, drizzle bannana and pear with lemon juice to retard discolorization. Combine yogurt, honey, lemon peel and vanilla, mix well and serve with fruit. Makes 4 servings.
