Three generations have made sparkling, table and dessert wines at this Paw Paw winery, housed in a state-designated historical structure built in 1898. See the old world champagne-making process and then taste the wide range of wines and champagnes. Self-guided tours include a video and a view of the champagne aging caves. A great place to learn more about wines and how they are made.

Here is some information on a few of the interesting wines that we sampled at Warner Winery, all of them include some of the grapes that we grow at our vineyard.

Mellow Red
Varietal Makeup: Marechal Foch & Chambourcin
A popular blend with fruity overtones, superb character and balance. A must for anyone who enjoys a touch of sweetness in their wines.
Harvest Date: Early September Average Brix: 20.0 % Alcohol: 11.0 %

Acidity (TA): .764

ph: 3.41 Residual sugar: 3.2%
Skin Contact: None Yeast: Epernay II

Fermentation: 18-20 Days

 

Classic White
Varietal Makeup: Vignoles, Seyval Blanc & Vidal Blanc
Rich and aromatic properties are exquisitely expressed in this charming wine in the blue bottle. Excellent pear and melon qualities are its heart and soul. A wonderful complement to poultry, fish and fruit.
Harvest Date: Mid - October Average Brix: 21 % Alcohol: 12 %

ph: 3.18 Residual sugar: 3.42%
Skin Contact: None Yeast: Epernay II

Fermentation: 30 Days

 

Classic Red
Varietal Makeup: Marechal Foch, Chancellor Noir & Chambourcin
Medium bodied and well balanced with generous Cedar and Currant nuances. Artfully blended and aged in oak. This wine is wonderful with the heartiest dishes.
Harvest Date: Early September Average Brix: 20.5 % Alcohol: 12 %

Acidity (TA): .849

ph: 3.48 Residual sugar: none
Skin Contact: 10 - 20 days Yeast: Pastuer Red

Fermentation: 10 Days

 

Classic Blush
Varietal Makeup: Marechal Foch
Delicate salmon color, delightfully fresh and fruity. Not as sweet as most White Zinfandels. A great accompaniment to most entrees. Serve chilled and enjoy!
Harvest Date: Early September Average Brix: 21.5 % Alcohol: 11 %

Acidity (TA): .839

ph: 3.06 Residual sugar: 2.44 %
Skin Contact: 1 hour Yeast: Epernay II

Fermentation: 7 Days

 

Liebestrauben   "Grapes of Love"
Varietal Makeup: Vignoles, Seyval Blanc, Riesling & Vidal Blanc
A silky smooth white wine with great legs and excellent body. By far our most popular white wine.
Harvest Date: Late September Average Brix: 21.5 % Alcohol: 12 %

Acidity (TA): .74

ph: 3.4 Residual sugar: 3.5 %
Skin Contact: None Yeast: Epernay II

Fermentation: 30 Days
