Honey Raisin Pie
- 1 1/2 cups raisins
- 1 tablespoon grated orange rind
- 4 tablespoons lemon juice
- 3/4 cup honey
- 2 tablespoons butter
- 1 teaspoon salt
- 4 tablespoons cornstarch
- 3/4 cup cold water
- Pastry for double crust (9")
Rinse and drain raisins. Combine with orange rind and juice, lemon
juice, honey, butter, salt, and cornstarch that has been moistened
in the cold water, and stir until blended. Bring to a boil and
cook and stir until mixture thickens (about 3 or 4 minutes). Pour
into pastry-lined pie pan, cover with top crust. Bake in a moderately
hot oven (425 degrees F.) 30 to 35 minutes. Cool before serving
