Turkey Salad with Grapes
Servings: 6
Preparation Time: 15 minutes
- 3 cups cut-up cooked turkey
- 1 cup sliced green grapes
- 2 medium stalks
celery, sliced (1 cup)
- 2 medium green onions, thinly sliced
(2 tablespoons)
- 1 (11-ounce) can mandarin orange segments, drained
- 1 (8-ounce)
can sliced water chestnuts, drained
- 1 cup peach or lemon low-fat
yogurt
- 2 tablespoons reduced-sodium soy sauce
- Mixed salad greens
Mix turkey, grapes, celery, onions, orange segments and water
chestnuts in large glass or plastic bowl. Mix yogurt and soy
sauce. Pour over turkey mixture; toss. Cover and refrigerate
at least 2 hours to blend flavors. Serve on salad greens.
